Exotic Salad Cucumber Bowls

Ingredients :

1 Cucumber

2 Apples (Red Delicious)

1 Avocado (Ripened)

1 Fennel

175g CASA ITALIA Pancetta (Rolled Dry Cured Bacon) Sliced

EMMA Extra Virgin Olive Oil

Salt & Pepper

Dill Sprigs (for presentation)

Toothpicks



Directions :

1. Slice cucumber lengthe wise using a slicer - make 8 slices

2. Wash and dice fruits and vegetables in small bite size pieces

3. Slice CASA ITALIA Pancetta slices in to smaller pieces, saute until golden brown and then add to fruit and vegetable mixture.

4. Add salt & pepper to your liking

5. Drizzle EMMA Extra Virgin Olive Oil in mixture.

6. Using a spoon make 1 1/2 inch mini piles of the fruit and veggie mixture.  Wrap thinly sliced cucumber around salad piles.  Use a toothpick to seal.

7.  Add more salad mixture to fill cucumber bowls as needed.

8. Top with dill sprigs for presentation - Refrigerate before serving.
