Who needs mashed potatoes with this keto friendly staple?
Boil the cauliflower in a large pot of salted water until very tender, on the verge of mushy, approx 8-10 minutes.
Drain and transfer to a food processor and blend with the rest of the ingredients, until smooth. Taste and adjusting the seasoning as necessary. Serve as you would mashed potatoes, alongside roasted or braised meats or under a mountain of gravy.
